Weekend Meal for Two – Ants Climbing a Tree & Tomato Scrambled Eggs

**Today’s Recipes:**

**Ants Climbing a Tree (Ground Pork with Sweet Potato Noodles)*

**Ingredients:**

– 50g sweet potato noodles

– 200g ground pork

**Seasonings:** Chili bean paste (Doubanjiang), soy sauce, oyster sauce, green onion, ginger, garlic, and salt.

**Steps:**

1. Soak the sweet potato noodles in warm water, or cook them directly in boiling water and set aside.

2. Pat the ground pork dry with paper towels. Heat oil in a pan, then add the ground pork and stir-fry until it changes color.

3. Add minced garlic and chopped green onion, stir-fry until fragrant. Then, add chili bean paste and cook until the oil turns red and aromatic.

4. Add the sweet potato noodles and a small bowl of water, bring to a boil. Add a little oyster sauce and salt for seasoning.

5. Simmer on high heat until the sauce thickens. Sprinkle with chopped green onion before serving.

**Tomato Scrambled Eggs**

**Ingredients:**

– 6 eggs

– 2 tomatoes

**Seasonings:** Minced garlic, chopped green onion, ketchup, soy sauce, oyster sauce, and salt.

**Steps:**

1. Crack the eggs into a bowl, add water (about one-third of the egg volume) and a pinch of salt. Whisk the eggs in one direction until fully mixed.

2. Dice half of the tomatoes and cut the rest into larger chunks.

3. Heat a generous amount of oil in the pan, add the egg mixture, scramble it lightly, and then remove it from the pan.

4. Using the leftover oil, sauté the minced garlic and chopped green onion until fragrant. Add the diced tomatoes and cook until they release juice, then add a bit of ketchup. Next, add the tomato chunks, soy sauce, and oyster sauce. Return the scrambled eggs to the pan and mix well.

5. Finally, add a little more salt to taste and sprinkle with chopped green onion before serving.

Both dishes are typical Chinese home-cooked meals—simple, easy to prepare, and perfect with rice. Give them a try!
